"These are what my own family calls honey balls. We cause them to every Easter season. They are messy but true!! Hope you experience them."

Ingredients :

  • 2 cups sifted all-motive flour
  • three eggs
  • 1 pinch salt
  • 2 cups vegetable oil
  • 1 1/4 cups honey
  • half of cup white sugar
  • 3 tablespoons pine nuts (elective)
  • 2 teaspoons confectioners' sugar

Instructions :

  • Sift flour. Make a well in center, and spoil eggs into it. Add salt, and knead until smooth.
  • Roll dough out on gently floured board till 1/four inch thick. Cut into half of inch strips, and reduce strips into tiny pieces half of inch long.
  • With the palm of palms, shape these tiny pieces into balls the size of a filbert nut.
  • Heat oil to 350 levels F (one hundred seventy five levels C).
  • Drop balls into oil 3 at a time. Fry till lightly browned, turning them constantly with a timber spoon. Remove balls and drain them.
  • Combine honey and sugar in saucepan and boil over low flame about 2 minutes, stirring constantly. Add fried dough balls, 1 cup at a time, and prepare dinner in honey syrup, stirring continuously, for 1 minute. Remove and put strufoli on flat plate to chill. Sprinkle with pine nuts and confectioners' sugar as soon as they're cool sufficient to deal with, and mould approximately 5 collectively in a cluster. Enough for 8, or so. Strufoli will stay clean for weeks if they're kept in a cool vicinity.
