Sweet Potato Pound Cake

"A light-tasting, pleasant-textured cake. Excellent for the vacation season."

Ingredients :

  • 1 cup butter, softened
  • 2 cups white sugar
  • 2 cups cooked and mashed sweet potatoes
  • 1 teaspoon vanilla extract
  • four eggs
  • three cups all-cause flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • half teaspoon floor nutmeg
  • 1/four teaspoon salt
  • 1 cup sifted confectioners' sugar
  • five teaspoons orange juice
  • 2 tablespoons grated orange zest

Instructions :

  • Preheat oven to 350 degrees F (a hundred seventy five degrees C). Grease and flour a ten-inch tube pan. Sift collectively flour, baking powder, cinnamon, baking soda, nutmeg and salt. Set apart.
  • In large blending bowl, cream butter and sugar until mild and fluffy. Add mashed sweet potatoes and vanilla. Beat until nicely combined. Add eggs, separately (the batter will look curdled). Add flour mixture to potato aggregate. Beat on low till mixed.
  • Pour batter into 10 inch tube pan. Bake at 350 levels F (175 degrees C) for approximately 1 hour and 20 mins, or until a timber toothpick inserted into cake comes out easy. Cool cake for 20 minutes inside the pan, then invert onto serving plate.
  • To make the glaze: in a small bowl, combine confectioners sugar with three to five teaspoons orange juice to reap drizzling consistency. Spoon over warm cake and sprinkle with orange zest if desired.
