Spicy Red Bean Soup

"This is a hearty soup served by my grandmother at many family gatherings. It is an absolute favourite. Tastes even higher the following day! It is made with linguica, that's a narrow Portuguese sausage heavily flavored with garlic. Linguica may be determined in Latin American markets and lots of supermarkets."

Ingredients :

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 6 tablespoons paprika
  • 2 1/2 cups ketchup
  • 8 cups water
  • 1 (1 ounce) package dry onion soup mix
  • 1 teaspoon salt
  • 1 tablespoon ground black pepper
  • 1 pound linguica, casings removed
  • 1 pound chourico - Portuguese smoked pork sausage
  • 5 (15 ounce) cans kidney beans
  • three potatoes, peeled and cubed
  • half pound spaghetti

Instructions :

Prep : Cook : 20M Ready in :
  • In a large pot over medium warmth, combine the oil and the onion. Saute for five minutes, or till onion is gentle. Add the paprika, ketchup, water, soup blend, salt and pepper and stir properly. Cut the linguica and chourico into three inch pieces and upload to the soup.
  • In a food processor or blender, puree the beans in small batches and add to the pot. Reduce warmth to low and simmer for 2 to a few hours. Add the potatoes and simmer for another hour. Break the spaghetti into three to four inch pieces, upload to the pot and simmer for some other 15 mins, or till spaghetti is smooth.
