- For Crust: In a huge bowl, sift together 1 1/2 cups flour, four tablespoons sugar and 1/4 teaspoon salt. Cut in butter, 1 egg and 1 teaspoon vanilla. Mix till dough forms. Roll into nine inch crust. Place dough in greased pie plate. Chill for 1 hour.
- Preheat oven to 350 tiers F (175 degrees C).
- In a huge bowl, beat 4 eggs. Add 1 teaspoon vanilla, 1 1/2 pounds ricotta cheese, 2 tablespoons flour, 1 cup white sugar and 2 tablespoons confectioners' sugar. Beat till smooth.
