Ingredients :
- 1 cup canned candy potato puree
- three egg yolks
- 1 cup milk
- 1 half cups cake flour
- 1 tablespoon baking powder
- 1 tablespoon white sugar
- 1 teaspoon salt
- 1 teaspoon floor nutmeg
- 1/4 cup chopped pecans
- 3 egg whites
- three tablespoons butter, melted
- 2 tablespoons pecans, chopped

- Stir together flour, baking powder, sugar, salt, nutmeg, and 1/4 cup pecans.
- Mix candy potato puree, egg yolks, and milk in a big bowl till well combined. Add flour mixture, and blend well.
- Beat egg whites till stiff peaks form. Fold 1/four of the egg whites into batter. Lightly fold last whites and melted butter into the batter.
- Cook in a warm waffle iron. Garnish with extra chopped pecans.
