Ingredients :
- 1 pork tongue
- 2 tomatoes, diced
- 1 onion, diced
- 1 bunch clean cilantro, chopped
- 1 tablespoon vegetable oil
- salt and pepper to flavor
- 6 (6 inch) corn tortillas
- three tablespoons lemon juice

- Simmer the tongue in water to cowl until not purple, approximately 50 minutes per pound of tongue. Remove from water and allow rest until cool enough to address. Peel the skin off the tongue, trim the gristle, and reduce into bite-size pieces.
